Dovetailed is a design studio and innovation lab that develops physical and digital experiences. Its product portfolio includes a 3D printer that prints fruit by using a molecular gastronomy technique. To create the flavors, the researchers combine fruit juice with powdered sodium alginate and then dripped into a bowl of cold calcium chloride. Each drop of the alginated liquid forms into tiny spheres which could subsequently be mixed with spheres from other fruits. The blended spheres could then being formed into any shape and size. Users can customize the taste and texture of the fruit without specialist knowledge of cuisine or molecular-gastronomy required. Dovetailed was founded in January 2011 and is based in Cambridge, United Kingdom.
